Breakfast Crepes With Fruit

Crepes are one of my first go to meals to eat when I go out to eat breakfast. This is almost embarassing for me to admit but my guilty pleasure meal are IHOP strawberries & cream crepes. My husband and I rarely ever eat out unless we’re on the road and I can never seem to get enough of this entree when I’m away from home! Even more embarassingly, I don’t think I’d ever eaten crepes until I’d eaten these ones!

Since I’d enjoyed eating these crepes so much, that I decided to teach myself how to make them from home. I’ve always been a sucker for homecooking so if I can make it myself, I will. Making homemade crepes are a lot easier to make than original anticipated. It’s a lot like making skinny pancakes or tortillas actually. If you don’t have a problem making pancakes, you’ll have no issues cooking crepes.

Preparation

Some tools of choice for today’s recipe are pretty basic. You’ll need a regular sized skillet or frying pan like this cast iron one I purchased from Amazon. The frying pan is essential for actually cooking your crepes on the stove. If you don’t already have these, you’ll need a medium mixing bowl and whisk or an electric hand mixer for combining your ingredients. Personally, I pefer to use a whisk over a hand mixer out of simplicity. What can I say? I’m just a simple woman!

Once you’ve made sure that you have all of the above tools, you’re now ready to begin cooking!

Cooking Instructions

1.) In a medium to large mixing bowl, combine flour, salt and sugar using a whisk. Once the dry ingredients are properly blended, mix in the eggs, milk, water and melted butter.

2.) Mix until the batter is thick and smooth with no lumps. Let the mixture set for about 30 minutes.

3.) Put 1/2 tbsp of olive oil in to a skillet and heat over medium. Once the oil is heated, pour 1/4 of the batter in to the skillet on an even layer. 

4.) Cook for a 2 minutes or until the batter has settled on the pan. Flip the crepe over on the other side and cook for another 2 minutes or until golden brown. Adjust the heat as needed. Repeat this process until all of the crepes are cooked.

5.) Fold the crepes and on a plate and top with fruit, powdered sugar and whipped cream. Serve and enjoy!

Easy Oatmeal Recipe

I’ve been on a bit of a breakfast kick these last few weeks. If you remember the last recipe I posted about How To Make An Omelet, then you’ll know what I mean. I decided to make a super simply recipe today because I wanted to provide something that anyone can make from home. It’s that simple!

Today’s recipe calls for old fashioned oats like the ones you can find in the link, Why you ask? It’s a preference I guess. I prefer the taste and consistency of old fashioned oats better than instant oats. Quality is important to me when it comes to all of my recipes and oatmeal is no exception.

So what’s really the difference you ask? Old fashioned oats, also referred to as rolled oats are flattened and flakey in consistency. They take less time to cook than steel cut oats because they are cut more thinly. Instant Oats are cut even more finely than old fashioned ones. They are a lot softer in texture and take a lot less time to cook.

Well, there you have it. Follow the directions I have provided below to get started!

Easy Oatmeal Recipe Instructions

Instructions

1.) Bring a small sauce pan of water to a boil. The amount of water in your cooking pot is dependant on the serving of oats. For this recipe, we will need 1 cup of water for 1/2 a cup of oats.

2.) Once the water has come to a boil, reduce the heat to low and pour the 1/2 cup of oats in to the pan. 

3.) Cook the oats on low for 5 minutes or until the oatmeal has thickened and absorbed all of the water in the pan.

4.) Add just a dash of salt to taste. Transfer the oatmeal to a bowl and add the milk. You may add fruits such as strawberries, blueberries, bananas or just about anything as toppings. Top off your oatmeal and enjoy!

Easy Omelet Recipe

If you enjoyed last week’s stove top burgers recipe illustrations, then you’re in for another treat. The omelet is one of my all time favorite breakfast foods. It’s a simple recipe requiring little time and ingredients. This is a personal benefit to me, as I suffer from a multitude of food sensitivities!

The awesome thing about making an omelet is that it’s a recipe that’s pretty hard to mess up. Not only can it be cooked up in minutes, but the toppings in an omelet are entirely up to the maker. I for one, love my omelets loaded with ham, cheese, spinach and tomatoes. Green onions are also a great addition if you’re going for extra flavor!

Get out that cast iron skillet and whisk once you’re ready to start cooking! You may already notice a trend with me if you’ve read some of my previous recipes already. I prefer to do most of my cooking using extra virgin olive oil. You can of course use coconut oil if you prefer, but EVOO is my instant go to for this recipe.

Easy Omelet Recipe Instructions

Instructions

1.) Beat 3 eggs in a medium sized mixing bowl. Season with salt and black pepper. Add diced ham and tomatoes to the mixture and combine ingredients thoroughly.

2.) Heat 2 tablespoons of olive oil in a skillet or frying pan on medium – low heat. Make sure the oil covers most or all of the skillet in a single layer.

3.) Pour the omelet mixture in to the skillet and swirl the ingredients so that it covers most or all of the skillet’s surface evenly. Cook the omelet until the mixture starts to bubble at the edges, usually around 20-25 seconds. Use a rubber spatula to flip the omelet over.

4.) Once the omlete has been flipped over, you may add cheese on to half of it if you’d like. I like to include a bit of chopped green onions as well during the stage. By the time you have finished adding your additional toppings, fold the omelet over and using your spatula and transfer it over to a plate.

5.) Add additional garnish such as spinach, tomatoes and pretty much anytime of your choice. Bon appetit!
